Silken Tofu Cacao Nib Blender Pancakes

These fluffy silken tofu pancakes pack an additional dose of plant protein and are good topped with maple syrup and crunchy cacao nibs!

  • 2 cups spelt flour may sub all objective
  • 1 tbsp. baking powder
  • 1 tsp. cinnamon
  • 1/4 tsp. salt
  • 1 lb. silken tofu
  • 1 cup non-dairy milk of selection
  • 1/4 cup vegetable oil
  • 2 tbsp. maple syrup
  • 2 tsp. vanilla extract
  • 1/2 cup cacao nibs


  1. In small bowl, combine flour, baking powder, cinnamon and salt.
  2. Place tofu in blender or meals processor and mix till clean. Add oil, milk, maple and vanilla. Mix till clean.
  3. Add dry ingredient combination in 3 or 4 increments, mixing between every addition. Mix simply till blended after the final addition. Batter might be comparatively thick.
  4. Spray griddle or skillet with cooking spray or coat with vegan margarine. Warmth over medium and drop in about 1/4 cup of batter. Sprinkle a couple of cacao nibs on prime.
